Sopa Negra Recipe

Ingredients:

  • 2 cups of dried black beans

  • 1 bunch of cilantro

  • 1 sweet chili, cut in strips

  • 1/2 sweet chili, chopped very fine

  • 1/2 teaspoon oregano

  • 1 stalk of celery

  • 2 cloves garlic (separated)

  • salt, and pepper 

  • 1 chopped onion

Garnish:

  • 2 hard-boiled eggs, sliced ​​or halved lengthwise

  • 1/2 onion, chopped

  • 1/4 of a cup of cilantro, chopped

Preparation:

Cook the beans with the garlic, cilantro, oregano, celery, sweet chili strips, salt and pepper in abundant water (enough to cook the beans until they are soft). When they are well cooked, grind or blend them to desired consistency.

In a frying pan, fry a clove of garlic with chopped onion and the very finely chopped sweet chili. When they are transparent, add the beans and season to taste with salt.

Let the soup cook a few more minutes to thicken to desired consistency. (If the soup becomes too thick, add hot water to thin it out.)

Enjoy on its own or as a side - preferably with a piece of freshly grilled fish!

Yields 6 servings.
